Nordic Spirits Lab: The Latest in Innovation
It seems you can’t move for innovation in food and contemporary, deconstructed versions of fine dining but when it comes to drink, it feels a bit slower off the mark. There’s craft beer, yes, and there always seems to be a new trend - an age-old South American cocktail having a moment or a spirit that was once reserved solely for gentlemen in the over-60 age category – but innovation? Not so much.
Enter the Nordic Spirits Lab: a new collective made up of specialists from inside and outside the industry who want to create, invent and bring new technologies and experiences to alcohol, while also coming up with progressive solutions to some of the problems that can come with it.
This is a platform that brings new and established innovators in the industry together – Sayan Isaksson, chef at Stockholm’s Esperanto; Peter Altenburg, founder of Copenhagen’s Gilt; and Laura Nissinen, head bartender at Helsinki’s A21 Decades among them – to collaborate, experiment and define the future of the industry.
The first product to come from NSL is G.01, a gin and akvakit (the Nordic classic that’s making a comeback) hybrid with flavours from juniper, coriander, caraway, dill and a hint of citrus. To see more from Nordic Spirits Lab, visit the website.
